But I make a similar omette, I do a tablespoon of coconut oil, 2 cups packed of baby spinach, 1/2 onion chopped, saute the spinach and onion until reduced down, use 1/2 cup egg whites and just sprinkly on a tsp of parmesan cheese at the end.
